This is one cool coffee! And even better, it's not your standard Kenya AA. This a Kenya AB. Sorting in Kenya is done by size, and the screen size Kenya AA is the highest sorting beans just over one-fourth inch in diameter. A bit smaller is the Kenyan AB grade. Most of the industry views AA as the gold standard--we don't agree as this coffee is one of the best we have had!
Cherries collected from the farmers in the region are bulked together and washed, fermented and laid out on raised beds to dry. The Cooperative puts a lot of focus on quality and are known for their meticulous sorting through the whole process. AAt the Kigwandi Factory, the coffee is fermented in tanks for 48 hours and then soaked for a second fermentation of 24 hours. Once the mucilage is removed the coffee parchment is taken to raised beds to dry for 2-3 weeks depending on the climate. This is an exceptional coffee and we hope you enjoy!
